Take-A-Break Bars

by Christine - From Dates to Diapers on November 8, 2008

Not only are these bars a healthy snack, but they are easy to make and a big hit with the kiddos, too!

here’s what you need:

• 1/2 cup all-purpose flour
• 1/2 teaspoon baking powder
• 1/2 teaspoon ground cinnamon
• 1/4 teaspoon salt, optional
• 1 1/2 cups chopped mixed dried fruit
• 2/3 cup oatmeal
• 1/3 cup chopped peanuts
• 6 eggs
• 2/3 cup firmly-packed brown sugar
• 1/2 cup chunk-style peanut butter
• 1 teaspoon vanilla

here’s what you do:

1. In medium bowl, stir together flour, baking powder, cinnamon and salt, if desired.
2. Stir in fruit, oatmeal and peanuts.
3. Set aside.
4. In large bowl, beat together eggs, sugar, peanut butter and vanilla until smooth.
5. Stir in reserved flour mixture.
6. Pour into greased 11 x 7 x 1 1/2-inch baking pan.
7. Bake in preheated 350° F oven until cake tester inserted in center comes out clean, about 20 to 25 minutes.
8. Cut into 12 bars.
9. Remove from pan.
10. Cool on wire rack.
