My Breakfast Challenge

Often mornings are so chaotic around our house that I forget to eat breakfast. The kiddos never miss breakfast, but there is always something more important for me to do. I know, eating breakfast is pretty important. In fact, it is the most important meal… Starting the morning with a nutritious breakfast is always a good way to feel energized throughout the entire day.
With the help of The American Egg Board, I have decided to create and accept my own breakfast challenge. Starting on Monday (since I’m away through the weekend) I will begin each day, for an entire month, with an egg breakfast. The hope is that I will see a marked improvement in my mental and physical energy levels (God knows I need it), and document the results.
“Why eggs?” you ask. Well, that is a good question. Did you know that one egg has 13 essential vitamins and minerals, high-quality protein, healthy unsaturated fats and antioxidants for only 70 calories? Not to mention the price of an egg averages at only $0.15 each…. That’s a pretty inexpensive breakfast, if you ask me!

What a great challenge! I’m just so bad at mornings… I wish I could commit to this, my kids would love it, they love eggs! Looking forward seeing how you do it!

i gotta tell you i am a HUGE breakfast girl. with my high energy i need to get the day off right. and seriously i find EGGS help me maintain my energy, think better, and can help me make it through the morning without a snack – which i need to do cause with the kids i’m so busy feeding i find it impossible to feed myself. so i promise to try the challenge and serve more eggs…especially since they are so inexpensive right now compared to everythiing else as a protein source. thanks for all the fun features you run!

Ok, I’m going to try this. Starting tomorrow we’ll have eggs every morning. I think it will be good for the kids, too.
I am in! I have been on a health journey for about 2 months and have lost 15lbs. Not eating breakfast is one of my worst bad habits.

This sounds like a great challenge, but I doubt I can drag myself out of bed an extra 20 minutes earlier to make eggs. I’ll talk to hubby about having eggs for dinner though.
We could be their poster children. We eat eggs every day, either for breakfast or dinner. Try scrambled eggs and cheddar wrapped in a whole wheat tortilla for a good on the go breakfast.
I’m in! I’m lousy at breakfast..I used to do really well. This is an essential part of losing weight as well…and…well…its been 9mo since baby #2 and I’m still trying to banish the weight!

I’m terrible at breakfast time. Oh, the kiddos eat good but me? It makes me woozy when I eat in the morn.
I think it’s a great challenge and while I probably won’t commit to it, I will mention it on post tomorrow that happens to be a breakfast recipe with eggs:)
I’m with Katja and a cowboy’s wife – I love this challenge, but I know I wouldn’t be able commit! I will definitely spread the word, though!
Thanks I need a challenge. I rarely eat breakfast. I find I feel much better when I do though – funny how that works. So I am in. I commit to eating breakfast (and at least egg).

I love eggs in the morning. Every Sunday evening I hard boil a dozen eggs, cool them & put them in a clear bowl in the fridge. I grab one almost every morning while reading the paper & having coffee. My teenager often grabs an egg on the way our the door in the am. and my son loves them in his lunch or as a quick snack when he gets home. I can also whip up a batch of egg salad for lunches in a jiffy..the kids favorite!
Love it! Breakfast is one of my favorite meals…I have it for dinner sometimes!
I don’t know that I can commit to eating eggs every morning (just because the babies don’t like them), but I did post pics of my egg breakfast yesterday. That’s a start, right!
The breakfast idea sounds great, it’s just that I had one of those moments a few years back where suddenly I didn’t like eggs anymore. I had been eating lots of them for breakfast and lunch, and it just became too much. I do still like breakfast burritos, though, so maybe I can try a bean burrito or something similar for breakfast.
My brother and sister in-law have eggs EVERY morning and swear by it.
I am willing to give it a try as well. Question: Can I do the challege and eat only egg whites?
Oh, I’d like to try this, but I didn’t get started when you did. Can I join even though I’m “late” and even if I don’t eat an egg breakfast every day?

I personally eat 3 whole eggs for breakfast every day. I prepare them in a variety of ways and occasionally just have egg whites, but the yolk is where all the nutrients are.

Breakfast should be your largest meal of the day. It will provide you with the necessary energy to get through the day, and I definitely need you to be full of energy so I can enjoy your tweets and your blog posts.
It’s not much of a challenge to get me to eat breakfast, but you can challenge me to recruit many others to join you.

If i don’t eat eggs every single morning I feel absolutely worthless for the day. I literally get a burst of energy in the morning after I eat my eggs. The crazier part is if I eat breakfast (no matter how healthy it is) and I don’t include my eggs I don’t feel as good as I would have with the eggs.
I love this challenge! There is no question me and my families mood and hunger level remain even for many hours after an egg breakfast as opposed to any other non protein meal.
I’m up for the challenge! I thought eggs were high in cholesterol, but I guess it’s the bacon on the side! Yikes!
