This quiche is perfect for breakfast, lunch or dinner… You could even make it the night before and enjoy a leisurely breakfast! It’s a huge family hit!
6 – 8 eggs, beaten well with ¼ cup of half and half.
3 handfuls of sliced mushrooms, and ½ diced onion, sauteed in 3T butter.
1 pound of washed spinach. Sauteed, with salt and pepper to taste.
1 tomato, diced
½ pound grated cheddar cheese (or combine cheddar, jack, or swiss)
Sometimes we’ll add bacon or ham, but it’s good without it, too!
Line a pie pan with a basic pie crust (you can buy it frozen, to save time!). Layer cheese, spinach, onions, mushrooms.
Pour ½ of the egg mixture on it, and continue layer until full.
Sprinkle with cheese.
Bake in a preheated oven at 475° until firm, about 45 minutes to an hour
